Winter is a season of fresh colorful vegetables. These vegetables are eaten raw and cooked as well. There are also many variaties in cooked vegetables. Vegetable soup are also liked. Today I will share my home recipe of mix vegetable curry of winter season. In this vegetable curry, cauliflower, green peas, carrot and fresh potatoes are main ingredients. You may add any vegetable you have in your kitchen. To make it a delicious and tasty vegetable curry, other vegetable ingredients are also used as a basic element. Ingredients:
Vegetable ingredients:
Cauliflower diced 2 cup
Carrot diced 1 cup
Green peas 1 cup
Potatoes diced 1 cup
Curry ingredients:
Oil 1/2 cup
Onion 1 piece
Tomato 1 to 2 pieces chopped
Ginger garlic paste 1 tablespoon
Dry spices:
Salt half table spoon
Red chili half tablespoon
Turmeric powder 1/4 tablespoon
All spice powder 1/4 tablespoon
Method to the recipe of mix vegetable curry
Ist and most important step is to wash well all vegetables.
Take cauliflower and separate it’s flowers from stem. Cut flower size equally. Don’t waste the internal soft branches and cut them in cube shape or any other which you like. Cauliflower has many benefits but it can upset the stomach so use garlic in this curry.
Peel off and cut all vegetables.
Cooking recipe of Mix Vegetable Curry:
Take a cooking saucepan. add oil and heat it. Add chopped onions and fry.
Add red chili, turmeric powder, ginger garlic paste and fry. Take a cup of water and keep sprinkling when spice stick to pan.
Take another saucepan, add water and boil. Add flowers of cauliflower in water for some time to be washed and half tender.
Then change the water and boil cubed stems of cauliflower till half tender. You can boil green peas also.
Now look back to cooking saucepan. Add potatoes and carrots. Fry them. Add half boiled green peas and cook them on low heat with close lid. If you like chicken stock for good taste you can add it now.
Now, you can add tomatoes. Add water to tender the vegetables. When the vegetables are near to tender add boiled cauliflower. Season the taste. And steam if needed. Then dry the water.
Your mix vegetable curry is ready. Garnish it with coriander. Serve it hot with bread or rice. You can see in pic below no access water or oil is here. I used only required oil to cook.
